I am always on the search for great tasting gluten free cake recipes. This Easter I wanted to make a carrot cake. I started googling hoping to find a good recipe and I stumbled upon a WINNER!!
I use King Arthur Measure for Measure Flour Blend. I also did not use the carrot
Purée. I instead used the full 3 cups of shredded carrots. The cake was so moist and
delicious! I will most definitely be filing this recipe away for use again.
