My daughter is NOT a fan of peanut. Several years ago she completed Peanut Desensitization, unfortunately we continue to struggle to keep peanut in her diet. She HATES peanuts. Recently I decided to try an old childhood favorite of mine to make consuming peanut a bit more palatable.
Puppy Chow
9 cups Rice Chex
1/2 cup Peanut Butter
1/4 cup butter or dairy free butter substitute
1 cup semi-sweet chocolate chips or Enjoy Life Chocolate Chips
1 tsp vanilla
1 1/2 cups powdered sugar
Directions:
1.In
a large Bowl measure out your Rice Chex and
set aside.
2.
In a medium size saucepan, melt the chocolate chips, butter and peanut butter
on low heat until completely melted and smooth. Stir frequently to prevent the
mixture from sticking. Remove from heat and stir in the vanilla.
3.
Pour the chocolate mixture over the dry cereal and stir carefully until it is
completely coated.
4.Pour
the cereal mixture into a large resealable bag and add the powdered sugar. Seal
the bag and gently shake until all of the cereal is coated.
5.
Spread the mixture out on waxed paper. Store in an airtight container or
bag.
To make this recipe allergen friendly for us, I used Enjoy Life Chocolate Chips, and Earth Balance Soy Free Spread.
